Serve it from a small slow cooker on the warm setting, or set the bowl over a low warmer. If it thickens, whisk in a splash of half and half to bring back that smooth, scoopable texture.

My queso is too thick - how do I thin it out? Stir in half and half a couple tablespoons at a time until it pours off the spoon the way you want. The fresh roasted-tomato chipotle salsa with its juices also loosens and flavors the dip. Add liquid gradually over low heat - too much at once makes the queso loose and greasy.

Can I make this queso dip ahead? Yes - make it up to 2 days ahead and refrigerate in an airtight container. Reheat gently in a slow cooker on low or in the microwave in 30-second bursts, stirring each time and adding a little half and half to smooth it back out. Brown the ground beef ahead too, to save day-of time.

I've had some rough queso in my day — but has that ever stopped my undying love? Absolutely not.

This is a two-recipe day: you cannot make this dip without fresh salsa, and you'll want plenty on the side for dipping. I love a roasted tomato salsa with a pop of smoky chipotle — it really lifts both the queso and the seasoned beef. You can leave the beef out, but I highly recommend keeping it.
