I work with chocolate almost every day. I temper it, pipe it, fold it into ganache, watch it go glossy and snap clean. And after fifteen-plus years of this, I still get a small thrill every time I unwrap a fresh block. Something about it never fully turns into routine.
Part of that, I think, is knowing where it comes from. The bar in your hand started as fruit on a tree in a rainforest, thousands of miles away. Most of us never see that part. So let me walk you through it, the way I'd tell you if you were standing in my kitchen.
Where does chocolate actually come from?
Chocolate comes from the seeds of a tropical tree called Theobroma cacao. The tree grows in a narrow band, roughly 20 degrees north and south of the equator, where it stays warm and humid year-round.
Most of the world's cacao grows in West Africa. The Ivory Coast and Ghana together account for well over half of the global crop. The rest comes from places like Ecuador, Brazil, and Peru in Latin America, and Indonesia in Southeast Asia.
The tree produces big, ridged pods, each one about the size of a small football. Crack one open and you don't find chocolate. You find seeds wrapped in a sweet, white, slippery pulp. That pulp is the beginning of everything.
How is a cacao pod turned into chocolate?
The short version: pod, then bean, then ferment, then dry, then roast, then grind. Each step builds the flavor, and skipping any of them would leave you with something that doesn't taste like chocolate at all.
Here's the longer version.
- Harvest. Pods are cut from the tree by hand and split open. The seeds and their pulp are scooped out together.
- Ferment. The seeds and pulp are heaped up, often under banana leaves, for several days. The sugary pulp ferments, heating the pile and triggering chemical changes inside the seed. This is the step most people have never heard of, and it's the one that creates the flavor precursors. Without fermentation, you simply don't get chocolate flavor.
- Dry. The fermented beans are spread out in the sun until their moisture drops way down. Drying settles the harsh, sour notes and gets the beans stable enough to travel.
- Roast. Now they're roasted, and this is where the smell turns into the chocolate we recognize. Roasting takes those flavor precursors from fermentation and develops them into hundreds of aromatic compounds.
- Crack and grind. The shells are cracked off, leaving the inner bits called nibs. The nibs get ground down until the friction and heat turn them into a thick, flowing paste. That paste is pure ground cacao, and it's the base of every chocolate bar.
From there, makers add sugar (and milk, for milk chocolate), then do a long, slow mixing step called conching, which smooths the texture and rounds off any lingering rough, acidic edges. That's the silkiness you feel when good chocolate melts.
What's the difference between dark, milk, and white chocolate?
It comes down to what's in the bar besides the cacao.
Dark chocolate is mostly ground cacao and sugar, with no milk. It runs bold and a little bitter, usually somewhere from 60 percent cacao on up.
Milk chocolate adds milk solids, which is why it tastes sweeter, creamier, and milder. It carries less cacao, often in the 10 to 45 percent range.
White chocolate is the interesting one. It's made from cocoa butter (the fat from the bean), plus sugar and milk, but it contains none of the brown cocoa solids that give dark and milk chocolate their color and that deep flavor. That's why it's pale and tastes of sweet cream and vanilla rather than cocoa. It's a real product made from the cacao bean, just from a different part of it.
What does the cacao percentage mean?
The percentage tells you how much of the bar, by weight, comes from the cacao bean. That includes both the ground cocoa solids and the cocoa butter. The remainder is mostly sugar, plus milk if it's a milk bar.
So a 70 percent dark bar is 70 percent cacao and roughly 30 percent sugar. A higher number means more cacao and less sugar, which usually reads as more intense and less sweet.
One thing worth knowing: the percentage tells you intensity, not quality. A 90 percent bar isn't automatically "better" than a 65 percent one. It's just less sweet and more concentrated. The right number is the one you actually enjoy eating.
What is single-origin and bean-to-bar chocolate?
Single-origin chocolate is made from beans grown in one place, sometimes a single country, sometimes a single farm. The point is to taste where it came from. Like wine or coffee, cacao picks up character from its soil and climate, so a bar from Ecuador can taste bright and fruity while one from Ghana leans deep and roasty.
Bean-to-bar means the maker controls the whole journey, from sourcing the beans to roasting, grinding, and finishing the bar themselves. Smaller batches, more attention, and usually more personality in the final taste.
If you've only ever had mass-market chocolate, a good single-origin bar is a lovely surprise. Same plant, completely different experience.
A reason to slow down with it
Next time you break off a square, give it a second before you chew. Let it melt. There's a whole journey in there: a pod cracked open in a rainforest, days of fermenting under leaves, sun-drying, roasting, hours of patient grinding.
That's the part that still gets me, even now. Chocolate is one of the most familiar flavors in the world, and it's also one of the most worked-for. Knowing the story doesn't make it taste different, exactly. It just makes me pay closer attention. And paying attention is most of what makes any food worth sharing.
