Caramelized Onion & Candied Tomato Frittata Recipe

Before You Start

How do I know when the frittata is done and not runny? The center should be just set with a barely-there jiggle, not wet or wobbly. Start it on the stovetop until the edges set, then bake at 375°F for about 15 to 20 minutes. An instant-read thermometer in the middle should hit 160°F. Let it rest 10 minutes - it keeps setting off the heat.

Do I need a cast-iron or oven-safe skillet? An oven-safe skillet is ideal since this frittata starts on the stove in 1 tablespoon butter and finishes in the oven. No cast iron? Sauté in any pan, then pour everything into a greased 9-inch baking dish or pie plate and bake until set. Just grease well so the eggs release cleanly.

Can I make the caramelized onions and candied tomatoes ahead? Yes, and you should - both take time and hold beautifully. Make the candied tomatoes and caramelized onions up to 3 days ahead and refrigerate, or freeze the onions up to 3 months. The whole frittata also reheats well, so you can bake it a day early and warm slices in a 300°F oven.

No ads. No pop-ups. Just the recipe.

Instructions

  1. 1Preheat the oven to 400F. Whisk eggs, heavy cream, salt, pepper, onion powder, and garlic powder together until you get a smooth and even texture. Set aside.
  2. 2Melt butter and coat the sides of the baking dish or cast-iron skillet with it.
  3. 3Pour in half of the egg mixture. Sprinkle on the candied tomatoes and caramelized onion. Then, sprinkle on half of the cheese and basil. Top with the remaining egg mixture and finish with the remaining cheese.
  4. 4Bake for 15 to 17 minutes, or until the edges are set and the top is lightly browned. Garnish with fresh chopped parsley and enjoy!
  5. 5Heat a sauté pan with the olive oil over medium-high heat. Add in the tomatoes and cook until softened and juices are released. Season with salt and pepper.
  6. 6Next, add in the brown sugar and balsamic vinegar. Cook for 2-3 minutes until the brown sugar is melted, and the mixture begins to simmer and thicken slightly.
  7. 7Remove from the heat and allow to cool.
  8. 8Heat a pan over medium heat with the oil. Add in the onions and stir frequently.
  9. 9Allow the onions to reduce by half and turn light golden. Once they begin to turn golden, add in the brown sugar and cook for another two minutes for a richer caramelization.
  10. 10Remove from the heat and allow to cool.

Make it yours

  • Tips for Success
  • Whisk Thoroughly: Ensure the egg mixture is well-whisked to create a smooth and even texture.
  • Even Layering: Distribute the candied tomatoes, caramelized onions, and cheese evenly to ensure each slice is packed with flavor.
  • Check for Doneness: The edges should be set, and the top lightly browned. Insert a toothpick in the center; if it comes out clean, the frittata is done.
  • Use Fresh Ingredients: Fresh basil and parsley enhance the dish’s flavor and presentation. Don’t skip these garnishes!
  • Variations
  • Add Protein: Incorporate cooked bacon, sausage, or ham for an extra layer of flavor and protein.
  • Vegetarian Delight: Add other vegetables like spinach, bell peppers, or mushrooms to the frittata mix.
  • Cheese Alternatives: Try using Gruyère, feta, or goat cheese instead of mozzarella and Parmesan for a different flavor profile.
  • Herb Variations: Substitute basil and parsley with thyme, rosemary, or chives for a different herbaceous twist.
