Heavenly Hot Cross Buns

- Hot Cross Bun Dough
1 TBS instant or rapid-rise yeast
1/2 cup sugar
1 1/2 cups warm milk
4 1/4 cups bread flour
2 tsp cinnamon
½ tsp allspice
½ tsp cloves
¼ tsp nutmeg
1/2 tsp salt
1 1/2 cups dried cranberries
1 orang, zested
4 TBS melted butter
1 egg

1/2 cup powdered sugar
5 TBS water
- Glaze
1/4 cup apricot jam
1 -2 TBS orange juice
Directions
- Place flour, yeast, sugar, spices, and salt in a large bowl. Briefly mix with an electric mixer fitted with a dough hook. Add butter, milk, egg, cranberries, and zest.
- Mix until a smooth elastic dough forms – 5 minutes on Speed 2 of the electric mixer. Add extra flour if needed but just enough that the dough comes away from the side of the bowl when mixing and doesn’t stick heavily to your fingers.
- Dust a work surface with flour and knead by hand for 8-10 minutes.
- Place dough in a bowl, cover with plastic wrap. Place in a warm place to rise until doubled in size.
- Line a baking sheet with parchment paper.
- Dust your work surface with flour. Place the dough on to your work surface and divide the dough into 12 pieces.
- Roll each section of dough into a tight ball and then place them onto the sheet pan, spaced evenly apart.
- Lightly spray the top the dough balls and cover with plastic wrap or flour sack towel and allow to rise almost double in size but not quite.
- Heat oven to 350 degrees.
- Make the crosses: Mix flour and water until a thick but slightly runny paste forms. Put the paste into a piping bag or ziplock bag. Cut the tip of the bag slightly and pipe the crosses on top of each bread roll.
- Place the buns into the oven to bake at 350 for about 20-22 minutes, or until they are a deep golden brown.
- While the buns bake, mix the jam and orange juice together. Microwave for 30 seconds and stir smooth. Once the buns are removed from the oven, brush on the glaze. Enjoy!
