Ingredients

  • Caramelized Onion & Candied Tomato Frittata
  • 6 large eggs

  • 1/2 cup heavy whipping cream

  • 3/4 tsp season salt

  • 1/4 tsp pepper

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • 1 cup grated mozzarella cheese

  • 1/2 cup grated parmesan cheese

  • 1/2 cup candied tomatoes (see recipe below)

  • 1/2 cup caramelized onions (see recipe below)

  • 1 TBS chopped fresh basil

  • 1 tbsp unsalted butter

  • 1 tsp chopped parsley, for garnish

  • Candied Tomatoes
  • 1 cup cherry tomatoes, cut in half

  • Salt and pepper to season

  • 1 TBS olive oil

  • 2 TBS brown sugar

  • 1 TBS balsamic vinegar

  • Caramelized Onions
  • 1 onion, sliced

  • 1 TBS oil

  • Salt and pepper to season

  • 1 TBS brown sugar

Directions

  • Caramelized Onion & Candied Tomato Frittata
  • Preheat the oven to 400F. Whisk eggs, heavy cream, salt, pepper, onion powder, and garlic powder together until you get a smooth and even texture. Set aside.
  • Melt butter and coat the sides of the baking dish or cast-iron skillet with it.
  • Pour in half of the egg mixture. Sprinkle on the candied tomatoes and caramelized onion. Then, sprinkle on half of the cheese and basil. Top with the remaining egg mixture and finish with the remaining cheese.
  • Bake for 15 to 17 minutes, or until the edges are set and the top is lightly browned. Garnish with fresh chopped parsley and enjoy!
  • Candied Tomatoes
  • Heat a sauté pan with the olive oil over medium-high heat. Add in the tomatoes and cook until softened and juices are released. Season with salt and pepper.
  • Next, add in the brown sugar and balsamic vinegar. Cook for 2-3 minutes until the brown sugar is melted, and the mixture begins to simmer and thicken slightly.
  • Remove from the heat and allow to cool.
  • Caramelized Onions
  • Heat a pan over medium heat with the oil. Add in the onions and stir frequently.
  • Allow the onions to reduce by half and turn light golden. Once they begin to turn golden, add in the brown sugar and cook for another two minutes for a richer caramelization.
  • Remove from the heat and allow to cool.
